Ratatouilles

Place all the pans in the oven (or work in batches if they don't fit at once). Add the olive oil and onions. Stir in the basil and few grinds of pepper to taste.
Add the onion and ¼ teaspoon salt.
While the oven is heating up, start the sauce.
The title refers to the French dish ratatouille, which. If you are reading this anytime between late fall and early spring, move along to a different recipe! Reduce heat over sauce to low.
